Bananas are great fatigue fighters, and so is this delicious banana bread
Ingredients:
- 1.5 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp baking powder
- 1/4 tsp ground nutmeg
- 2 egg whites
- 3/4 cup dark honey
- 1/4 cup blackstrap molasses
- 1 cup mashed ripe banana
- 1/4 cup olive oil
- 1/2 cup chopped, pitted dates
- liquid lecithin from any health food store to oil the bread pan
Stir together all dry ingredients, then blend well egg whites, honey, molasses, and the banana. Add oil while stirring continually, then turn the dry ingredients into the wet ingredients. Add dates last. Oil loaf pan (8x4x2) with lecithin and pour the batter into the pan. Bake at 355F for 55 minutes. Let cool for 10 minutes inside the pan, then remove from the pan.
